I have been wanting to add a vegan side dish to the range for quite a while. After a few experiments I'm proud to release this gorgeous option. This is my other ultimate side dish (apart from my C Si Bon Potato Gratin). It’s versatile and tastes delicious when paired with chicken, seafood, beef, lamb, potatoes or just gobbled up by itself.
We blanched red, orange and yellow capsicums, zucchini and celery until par cooked but still super crunchy. These were then tossed through a pistou sauce. Pistou is a Provençal sauce made with fresh basil, cloves of garlic and olive oil blended together. A bit like pesto without the cheese. The vegetables are then bedded into a rustic tomato sauce and the whole dish is topped with roasted eggplant slices.
This is also a departure from my other meals as it can be heated in the microwave only. I really wanted to retain crunch in the vegetables so by microwaving it, it retains that delicious fresh texture whilst still having the convenience of a frozen meal. It only takes 3 minutes once defrosted or 6 minutes from frozen.
Guaranteed vegetable crunch and retained freshness with plenty of vitamins and a delicious flavour. I'm very happy with this one.

Cooking Instructions
1. Defrost until thawed and place in microwave with lid on for 3 minutes on high.
2. From frozen, place in microwave and re-heat on high for 6 minutes.
