ZUCCHINI BISQUE

As Autumn is upon us but the warmish weather is still here, this is a beautiful seasonal soup made with the freshest local ingredients.

Zucchini season is in full swing and I love it in many forms. This little gem is a perfectly balanced, light, moreish soup that is dairy free! We've cooked off some locally sourced brown onions in olive oil and added diced zucchini to get a little colour. Add in some vegetable stock, ground cumin and coconut milk and then blitz. Super healthy and totally delicious. What a wonderful way to get some more greens into your diet.

Cooking Instructions

 Oven : From frozen, place in oven at 180C for 30 minutes. Stir occasionally.

Microwave : Remove from silver foil container and place in microwave safe bowl. Re-heat on high for 4-5 minutes stirring occasionally.

Servings per pack : 1 large serve or 2 medium sized serves

Storage Instructions : Store in your freezer until ready to re-heat.
