FISH WITH MEDITERRANEAN FLAVOURS

C Si Bon Fish with Mediterranean Flavours is a light and easy dinner sourced using fresh WA fish. The type of fish used in this dish may vary depending on what is available from the market and of course, what is freshest.

I love eating fish and try to do so a couple of times a week. This is one of my own recipes that I love and my kids do too. 

Firstly, I like to grill the fish with some paprika and finish with a little fresh dill. Paprika is a beautiful spice. I love it's smokiness and fantastic colour! This is then added to a ragu of cherry tomatoes that are very much in season right now. I use an assortment of different coloured cherry tomatoes for the ragu, from yellow to dark green, as this adds a visual depth to the dish. I also throw in some fresh garlic, basil, kalamata olives and tiny capers. This adds some crunch and zest and works perfectly with the subtle texture of the fish.

I classically serve this with a fresh salad and C Si Bon's new Saffron Spiced Rice. Both of which are easily re-heated from frozen in the microwave.

Cooking Instructions

1. Defrost until thawed and place in microwave with lid on for 3 minutes on high.

2. From frozen, place in microwave and re-heat on high for 6-8 minutes depending on strength of microwave.
