We use fresh West Australian onions and slow cook until caramelised. We then add a touch of brandy, lots of beef stock, thyme and bay leaves and leave to simmer away until all the flavours are intensified and rich. To further immerse yourself in this French staple, grill some fresh baguette with gruyere cheese and float on top. Allow the croutons to soak up all of the lovely soup and devour!
