MAURITIAN CHICKEN & POTATO CURRY

Mauritius is synonymous with spicy food. Once being part of the ancient spice route it's food is heavily influenced by many exotic flavours. This chicken and potato curry was served at every family event when I was little and definitely has a little spice kick. It conjures up many happy memories and smells of Mauritius!

My maternal grandmother used to make this curry regularly. We always used to laugh at how much olive oil she used to make it! My version is definitely less oily and I use boneless chicken thighs to add wonderful depth of flavour. I start by sautéing brown onions, garlic, turmeric, ginger, curry leaves and curry powder until fragrant, then add the chicken as well as some crushed tomatoes, salt and chicken stock as well as Royal Blue potatoes. This curry cooks until it's a bright yellow colour and tastes amazing. Serve with our C Si Bon Spiced Rice, some chopped fresh tomatoes on the side and top with a little fresh coriander if you like. Delicious!

Cooking Instructions

Re-heat from frozen at 180 degrees celcius for 30-40 mins (until piping hot). The 900 gm pack will take at least 45 mins - 60 mins to re-heat from frozen. If thawed, adjust heating times to 20-30 mins for the 450 gms and 30-40 mins for the 900 gms pack.

Storage Instructions : Store in your freezer until ready to re-heat. Do not re-heat twice!
