MAURITIAN ROUGAILLE

The national dish of Mauritius! Fresh herbs, onions and spicy sausages are slow cooked with vine-ripened tomatoes to create a mouth-watering dish everyone will love.

My mother is from Mauritius and we have eaten this dish at least once a week since we were little children. Every family gathering included a Rougaille of some description. Traditionally they can be made with any meat but the sausage is my favourite. Fresh herbs, onions and spicy sausages are slow cooked with vine-ripened tomatoes to create a mouth-watering dish. Robust in flavour and deliciously hearty, this meal really satisfies. Serve this with steamed rice and puy lentils. Just beautiful.
