RASPBERRY ETON MESS - AWARD WINNER

Who doesn't love a frozen dessert? This raspberry delight is creamy, decadent and divine. So perfect for this Indian summer we are experiencing.

Eton Mess reminds me of summer's spent in England with my aunt on her farm in Nottinghamshire where she grew fresh raspberries. Nothing tastes sweeter than fresh raspberries picked straight from the bush. She made this dessert for us so it pangs at my heart strings for English summers and family love. 

I started by whipping cream with vanilla and added a touch of icing sugar. I didn't add any sugar to the raspberries as I thought it would make a nice juxtaposition to the cream and crunchy sweet meringue. Mixed together until just combined and then snap frozen. YUM!!

Preparation

Remove from freezer and defrost for 5 minutes.

Cooking Instructions

Defrost for 5 minutes, cut into slices and serve.
